Production Process of Frozen Food
Production Process of Frozen Food
For Kerevitaş's frozen products, seeds are planted that are natural, have high productivity, and comply with criteria such as taste and appearance. The sowing process is carried out in season and in regions with suitable soil structure under the supervision of agricultural engineers.
Our products are grown under the control of agricultural engineers until the harvest. After the harvesting process, the products are shipped to the factory without losing its freshness and taken into production.
During the production phase, the products are sorted, selected, washed, boiled and pre-cooled, respectively, according to their type.
The products whose preliminary preparation process is completed are frozen at -40°C using the IQF (Individual Quick Frozen) method with a core temperature of -18°C. They are packaged without them losing their nutritional value. Packaged products are kept in cold storages until they are shipped after being taken to cold storage at -20°C in order to maintain the cold chain. Seasonal frozen vegetables and fruits are always fresh and set out to add flavor to your tables every season.
The difference between freezing at home and fast freezing
As the freezing process takes place slowly in domestic freezers, it causes nutritional value losses in the products by cracking the cell membrane of the foods. Therefore, to prevent these losses during the freezing process, foods must be frozen without cracking their cell membranes.
Kerevitaş products are frozen at -40 °C with IQF technology, which is the most ideal and advanced freezing process. When freezing with your own means at home, the duration of the freezing process at -20 °C is prolonged, which causes blocking, color and nutritional value losses in the products. Kerevitaş products are frozen in the shortest time possible after being harvested from the field, under completely natural conditions at -40 °C with "fast freezing". Small ice crystals form in the cell sap of the products frozen with IQF technology. The integrity of the plant cell is preserved and the nutrient and vitamin values are prevented from being removed from its body. Thus, the products are protected without losing their freshness.
Vegetables such as SuperFresh Green Beans and Spinach, whose freshness is guaranteed by Kerevitaş, preserve all their vitamin values, do not lose their fresh appearance and do not smell, unlike green beans and spinach frozen at home.
Benefits of Frozen Food
No additives are used in frozen food products. For food products to last for a long time, it is sufficient to freeze them with the special IQF method. Thanks to this method, no extra effort is required to preserve the products for a long time. They do not lose their vitamin and mineral values as they are frozen quickly after being plucked from the branch.
In addition, frozen products that have undergone routine organoleptic controls (taste tests) have been confirmed to have the same taste and quality in each serving. Also, when frozen food is purchased, no payment is made for parts such as stems, shells and seeds, and since only the ready-to-cook product is paid, frozen foods are economical as well as healthy. For example; 1 kg of cleaned, washed and frozen vegetables is much more in quantity than 1 kg of vegetables bought from the supermarket or farmer’s market.
Due to the ever-accelerating pace of life, working women can spare less time in the kitchen today, and frozen food saves time without compromising on health and taste.
As a result, frozen foods, which save money, time and energy, are chosen from the best raw materials and have all their nutritional values preserved in hygienic conditions without any additives, are the most practical solution of our modern age.
